Anchovy Pasta with Spinach
serves 4
Ingredients
- 1 lb short pasta, cooked
- 1/2 C olive oil
- 1 cn anchovies
- 1/2 t crushed red pepper flakes
- 3 cl garlic, fine chop
- 5 C baby spinach
- 1/2 C Panko breadcrumbs
- 1/3 C Parmigiano, grated
Instructions
- Melt the anchovies in 1/4 C oil over low heat in a skillet, then add the pepper flakes and garlic and continue until the garlic is fragrant.
- Add the spinach, saute until the spinach is wilted, then mix in the breadcrumbs. Season to taste.
- Toss the pasta in with the spinach, mix in the remaining oil, plate, garnish with the cheese, and serve hot.
